Primitivo

General Description: Primitivo is a red grape variety primarily grown in the Puglia region of southern Italy, particularly in the Salento peninsula. It is known for producing bold, full-bodied red wines with rich fruit flavours and a characteristic spiciness. Primitivo wines are often compared to Zinfandel, a grape variety with which it shares a genetic relationship, as both are believed to be clones of the Croatian grape Crljenak Kaštelanski. Primitivo wines typically exhibit flavours of ripe blackberries, plums, and cherries, along with notes of black pepper, cinnamon, and tobacco. They are usually high in alcohol and have robust tannins, contributing to their powerful and intense character.

Primary Flavours:

  • Blackberry
  • Plum
  • Cherry
  • Black pepper
  • Cinnamon
  • Tobacco

Taste Profile:

  • Sweet-Dry: Dry
  • Body: Full body
  • Tannins: High
  • Acidity: Medium to high
  • ABV range: Typically between 14% to 15.5%

Handling: Primitivo wines benefit from decanting before serving to allow them to breathe and soften, particularly if they are young and tannic. Serve at around 16°C to 18°C to fully appreciate their complex flavours and structure. While many Primitivo wines are enjoyable upon release, some higher-quality examples have the potential to age gracefully, developing additional complexity over time.

Food Pairing Suggestions: Primitivo’s bold flavours and robust structure make it a great match for hearty and savoury dishes. It pairs well with grilled and roasted meats, such as steak, lamb, and game, as well as with rich pasta dishes and hearty stews. Primitivo also complements aged cheeses, charcuterie, and dishes with spicy and smoky flavours. Its ripe fruit character can provide a nice contrast to dishes with sweet and tangy sauces, such as barbecue or tomato-based sauces.
