Schiava

General Description: Schiava (also known as Vernatsch or Trollinger in Germany) is a red grape variety predominantly grown in the Alto Adige/Südtirol region of northern Italy and parts of Germany. It is known for producing light-bodied, low-tannin wines with a characteristic pale red colour and high acidity. Schiava wines are typically aromatic, offering delicate flavours of red berries, cherries, almonds, and violets, making them easy to drink and enjoy young. This variety often yields wines that are fresh and fruity, with a slight sweetness and low alcohol content, making it a popular choice for casual drinking and as an accompaniment to light meals.

Primary Flavours:

  • Red cherry
  • Raspberry
  • Almond
  • Violet
  • Cotton candy

Taste Profile:

  • Sweet-Dry: Typically dry, but with a perceptible fruit sweetness
  • Body: Light body
  • Tannins: Low
  • Acidity: High
  • ABV range: Typically between 11% to 12.5%

Handling: Schiava wines are best served chilled, at about 12°C to 14°C, to enhance their light and refreshing qualities. These wines are intended to be consumed young to appreciate their full aromatic profile and fresh fruit flavours. Ageing is not generally recommended for Schiava wines, as their charm lies in their youthful and vibrant character.

Food Pairing Suggestions: The light and aromatic nature of Schiava makes it an excellent pairing with light appetisers, charcuterie, and soft cheeses. Its high acidity and delicate fruit flavours also complement light pasta dishes, seafood, and poultry, especially when served with light sauces or fresh herbs. Schiava can be a delightful match for dishes with a sweet and savoury contrast, such as salads with fruit components or lightly spiced Asian cuisine.
