General Description: Sémillon is a white grape variety that originates from the Bordeaux region of France, where it is primarily used in the production of sweet wines such as Sauternes and dry white Bordeaux blends, often in conjunction with Sauvignon Blanc. Sémillon is known for its full body, moderate acidity, and an ability to develop complex flavours and textures, particularly when affected by noble rot (Botrytis cinerea), which concentrates the sugars and flavours in the grape. This grape variety is also grown in Australia, particularly in the Hunter Valley, where it produces distinguished dry white wines known for their longevity and evolving character.
