As the weather begins to warm and the days grow longer, our palates start to crave fresher, brighter flavours. The rich, wintry reds and hearty stouts that sustained us through the cold months give way to lighter, more vibrant options that sing of the season’s renewal.
Perfect Pours for Picnics
Few things say “spring” in the UK quite like a picnic hamper. When planning your al fresco dining this season, be sure to stock up on wines that won’t weigh down the basket. Opt for fruity Italian whites like pinot grigio and vermentino, which pair beautifully with classic British picnic fare like pork pies, Scotch eggs and sandwiches. Both varietals have enough acidity to cut through the richness. “I like to chill a bottle of vermentino for a spring picnic,” says notably English wine writer Oz Clarke. “It has that seaside holiday feeling.” Picnics also present the perfect opportunity to break out the seasonal golden ales and fruit lambics that evoke memories of lazy afternoons in the park.
Raising a Toast to Lighter Nights
As the days stretch out before us, we welcome more opportunities for alfresco imbibing with friends. An aperitif spritz makes for the ideal sundowner – not too strong, with plenty of lively citrus flavours. The classic Aperol spritz never goes out of style, but this season why not give a British alternative a go? Sussex’s Firebird Spritz mixes elderflower and grapefruit for a deliciously refreshing twist. Serve in a wine glass over ice with seltzer water and a slice of orange. “As the sun goes down, I like to let the good times roll with a light, fizzy pour that keeps everyone’s spirits high,” says drinks blogger Emma Smallwood.
Staying Chilled Behind the Bar
Lighter cocktails can ensure you keep your cool whilst hosting spring gatherings. “This time of year, I shake up white wine spritzers for my guests,” says mixologist Tom Harfleet. “They have all the crisp flavours of the season.” Simply combine equal parts dry white wine and soda water in a wine glass over ice and garnish with a grapefruit wedge. For a bit more complexity, add a splash of elderflower liqueur. The lower alcohol content means friends can linger and natter late into the evening without losing their heads.
No matter how you choose to welcome spring, keeping things light, bright and bubbly sets just the right tone. The longer days seem sweeter with a properly paired, patio-friendly pour in hand.
